Klingon Blood Wine Rough Rack - Getting the Wine off the Fruit! So as you know you shouldn't rack til the wine is finished fermenting, but... what about all that fruit? Yep, you want to remove that but keep the yeast colony as intact as possible. If we didn't do this, there is a possibility of our wine becoming infected, or mold growing on that fruit. It's very unlikely, but it's something to keep an eye out for. No one wants moldy bloodwine.
